- 4 lamb shoulder chops
- 2 tablespoons olive oil
- 4 garlic cloves minced
- 1 tablespoon fresh rosemary chopped
- 1 tablespoon fresh thyme chopped
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup beef broth or red wine optional for sauce
- 1 tablespoon unsalted butter
Pat the lamb shoulder chops dry with a paper towel and season both sides with salt, pepper, and paprika.
Heat olive oil in a skillet over medium-high heat. Sear the chops for 3-4 minutes on each side until browned, then remove and set aside.
Lower the heat and add minced garlic, rosemary, and thyme to the skillet. Sauté for 1-2 minutes until fragrant.
