Ingredients
  

  • 4 lamb shoulder chops
  • 2 tablespoons olive oil
  • 4 garlic cloves minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup beef broth or red wine optional for sauce
  • 1 tablespoon unsalted butter

Instructions
 

  • Pat the lamb shoulder chops dry with a paper towel and season both sides with salt, pepper, and paprika.
  • Heat olive oil in a skillet over medium-high heat. Sear the chops for 3-4 minutes on each side until browned, then remove and set aside.
  • Lower the heat and add minced garlic, rosemary, and thyme to the skillet. Sauté for 1-2 minutes until fragrant.
  • Deglaze the pan with beef broth or red wine, scraping any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
  • Add the butter to the sauce and stir until melted. Return the lamb chops to the skillet and spoon the sauce over them. Cook for an additional 4-5 minutes until fully cooked (internal temperature reaches 145°F for medium).
  • Remove from heat, let rest for 5 minutes, and serve with your favorite sides.

Notes

  • For extra flavor, marinate the lamb chops in olive oil, garlic, and herbs for 1-2 hours before cooking.
  • Serve with mashed potatoes, roasted vegetables, or a fresh green salad for a complete meal.
