Ingredients
  

  • 1 pound carrots peeled and cut into sticks or left whole if baby carrots
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves optional

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, combine honey, olive oil, salt, and black pepper. Stir until well mixed.
  • Add the carrots to the bowl and toss until evenly coated with the honey glaze.
  • Spread the carrots in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 20-25 minutes, turning halfway through, until the carrots are tender and caramelized.
  • Optional: Garnish with fresh thyme before serving.

Notes

  • For extra caramelization, broil the carrots for 1-2 minutes at the end of cooking.
  • You can substitute maple syrup for honey if preferred.
