Ingredients
  

  • 2 tablespoons olive oil
  • 4 6-ounce salmon fillets (skin-on, boneless)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper adjust for heat level
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup fresh spinach chopped
  • ½ cup Parmesan cheese grated
  • 2 tablespoons cream cheese softened
  • 1 teaspoon lemon juice
  • Lemon wedges for serving

Instructions
 

Prepare the Blackened Seasoning:

  • In a small bowl, combine paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper. Set aside.

Prepare the Salmon:

  • Slice each salmon fillet horizontally to create a pocket for stuffing. Be careful not to cut all the way through.

Make the Filling:

  • In a mixing bowl, combine chopped spinach, Parmesan cheese, cream cheese, and lemon juice. Mix until well incorporated.

Stuff the Salmon:

  • Divide the spinach and Parmesan mixture evenly and stuff each salmon fillet pocket. Secure with toothpicks if needed.

Season the Salmon:

  • Rub each fillet generously with the prepared blackened seasoning, coating all sides.

Cook the Salmon:

  • Heat olive oil in a large cast-iron skillet over medium-high heat. Place the stuffed fillets in the skillet and cook for 3-4 minutes on each side or until the salmon is blackened and cooked through.

Serve:

  • Remove from heat and serve with lemon wedges. Pair with your favorite sides like roasted vegetables or garlic mashed potatoes.
