  • Baking sheet
  • Parchment Paper or Silicone Baking Mat
  • Microwave-Safe Bowl (for melting chocolate) or Double Boiler
  • Fork or Dipping Tool (for dipping balls in chocolate)
  • Refrigerator

Ingredients

  • 1 cup pecan halves finely chopped
  • 1 cup graham cracker crumbs
  • 1 cup powdered sugar
  • 1/2 cup light corn syrup
  • 1 tsp vanilla extract
  • 8 oz semi-sweet chocolate melted
  • Optional: Sea salt or crushed pecans for garnish

Instructions

Prepare the Base:

  • In a large bowl, combine chopped pecans, graham cracker crumbs, and powdered sugar.

Mix Wet Ingredients:

  • Add corn syrup and vanilla extract to the dry ingredients. Mix until well combined and the mixture holds together when pressed.

Shape the Balls:

  • Roll the mixture into 1-inch balls and place them on a lined baking sheet.

Chill:

  • Refrigerate the balls for at least 1 hour or until firm.

Dip in Chocolate:

  • Melt the semi-sweet chocolate. Dip each ball into the melted chocolate, ensuring it's fully coated. Place back on the lined baking sheet.

Garnish:

  • Optionally, sprinkle sea salt or crushed pecans on top before the chocolate sets.

Set and Serve:

  • Let the chocolate harden completely before serving. Store leftovers in an airtight container in the refrigerator.

Notes

  • You can substitute the light corn syrup with maple syrup for a slightly different flavor.
  • For a festive touch, drizzle with white chocolate or sprinkle with holiday-themed decorations.
