Ingredients
  

  • 3 cups sweet potato noodles
  • 1 cup coconut milk
  • 2 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley optional, for garnish
  • Red pepper flakes optional, for garnish

Instructions
 

Prepare the Sweet Potato Noodles

  • Use a spiralizer to create long, even noodles from sweet potatoes.
  • If using pre-made noodles, rinse them under cold water and pat them dry with a clean towel.

Heat the Olive Oil and Sauté Garlic

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes until fragrant, stirring occasionally to prevent burning.

Make the Creamy Sauce

  • Pour 1 cup of coconut milk into the skillet with the garlic.
  • Gradually add the grated Parmesan cheese, whisking continuously to create a smooth and creamy sauce.
  • Season the sauce with salt and pepper to taste.

Cook the Sweet Potato Noodles

  • Add the sweet potato noodles to the skillet with the sauce.
  • Toss gently to coat the noodles evenly in the sauce.
  • Cook for 3-4 minutes, stirring occasionally, until the noodles are tender but still slightly firm (al dente).

Garnish and Serve

  • Transfer the creamy sweet potato noodles to serving plates or a large dish.
  • Garnish with fresh parsley and a sprinkle of red pepper flakes, if desired.
  • Serve immediately while warm and enjoy!
