Ingredients
  

Pancake Batter

  • 2 cups pancake mix
  • 1 ½ cups milk
  • 2 large eggs
  • 2 tbsp melted butter

Topping

  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup fresh berries optional
  • Powdered sugar for dusting

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a baking dish.
  • In a bowl, combine pancake mix, milk, eggs, and melted butter, stirring until smooth.
  • Pour the pancake batter into the prepared baking dish.
  • Bake for 20-25 minutes or until golden brown.
  • While baking, mix maple syrup and vanilla in a small bowl.
  • Drizzle maple syrup mixture over the casserole once out of the oven.
  • Top with fresh berries if desired and dust with powdered sugar before serving.

Notes

For extra flavor, add a handful of chocolate chips or cinnamon to the batter. This casserole is great with fresh fruit on top or even a dollop of whipped cream!
