Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt

Wet Ingredients:

  • 1 cup mashed sweet potatoes roasted and cooled
  • 1 cup granulated sugar
  • ½ cup brown sugar packed
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

Add-Ins:

  • ½ cup chopped pecans plus extra for topping

Instructions

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Prepare Dry Ingredients:

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Mix Wet Ingredients:

  • In another bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until smooth and well blended.

Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Avoid overmixing for a tender loaf.

Fold in Pecans:

  • Gently fold in the chopped pecans, ensuring they are evenly distributed throughout the batter.

Transfer to Pan:

  • Pour the batter into the prepared loaf pan. Sprinkle extra chopped pecans on top for added crunch and visual appeal.

Bake:

  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool:

  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For extra moistness, you can add 2 tablespoons of sour cream or Greek yogurt to the wet ingredients.
  • This bread pairs wonderfully with a smear of butter or a drizzle of honey.
